- Olive oil- 1 teaspoon.
- Chopped green onions- ¼ cup.

- Vegetable broth- 3 cups.
- Peas- ¾ cups.
- Cooked brown or green lentils.

How to Cook?
Take a large saucepan and heat it with medium temperature then pour in the oil. Add the green onions and the shallots. Cook it for 3-5 minutes by stirring frequently.
Now add broccoli, salt, pepper, and thyme. Sauté for 5 minutes. Then add the broth and boil the mixture. Add the peas and lentils.
You need to cook it for additional 15 minutes until the vegetables get tender enough. Then cool it slightly and add the spinach to the pot.

- Vegetable Broth- 8 cups
- Red Lentils- ½ cup
- Carrots- 2
- Onions diced – 2

- Parsley- 1 tablespoon.
- Zest Lemon- ½
How to cook?
Pour water in a large pot and add the vegetable broth, lentils, carrot, kale, onions, and garlic, then put it to boil until 15-20 minutes so that the lentils get tender.

- Dried mix mushrooms- 1 oz.
- Water- 8 cups.
- Sherry cooking wine- 3 tablespoon.
- ¼ cup apple cider vinegar.
- Soy Sauce- 2 tablespoons.
- Kosher salt- 1 and ½ teaspoon.
- Grated ginger- 1 tablespoon.
- 1 pound of extra firm tofu.
- Corn starch- 2 tablespoons.
- White pepper- ¼ teaspoon.
- Trimmed and thinly sliced scallions- 6
- Pure sesame oil.
How to cook?
Take a bowl, place the dried mushrooms and cover them with 2 cups of water and put them to boil. Cover the bowl and allow the mushroom to be reconstituted for at least half an hour. Till that time prepare other ingredients.
Then remove the mushrooms from the hot water and preserve the water for soup. Now slice the mushrooms thinly. Then take a soup pot and add 6 cups of water with the liquid of the mushroom and also add the sliced mushrooms.
Bring the liquid to boil over medium heat and add vinegar, sherry, soy sauce, ginger, salt, and tofu. Now reduce the heat and remove the cover. Let it simmer for 10 minutes.
Take a small bowl and whisk the cornstarch with a ¾ cup of vegetable broth from the soup. Whisk properly until the starch is dissolved properly. Now pour the mixture into the soup pot and stir adequately. Also, add the 2 beaten eggs and stir continuously in the soup then mix the scallions and white pepper properly and let it boil for until 2 minutes.
